Leather in Minecraft: How to Get It and Uses
Leather drops from cows, mooshrooms, horses, donkeys, mules, llamas and hoglins, and comes as fishing junk and piglin bartering. It makes leather armor, books, item frames, bundles and leather horse armor, and rabbit hide crafts into leather too. Leatherworkers buy and sell leather goods.

Tips
Leather armor gives the least protection of any armor, but it is cheap and dyeable, and many minigames use it to show team colors. Rabbit hide is handy where cows are rare, such as deserts and snowy biomes where rabbits are common. Leather also repairs leather armor in an anvil.
